I have made this for friends who have never had French Toast and they love it! This is an elegant and easy dish to prepare as long as you keep an eye on it during the cooking process. It will give your breakfast or brunch some dazzle and you will get rave reviews from your diners!
Sliced bread
2 eggs, whisked
a splash of light cream or milk
1 teaspoon of vanilla
a few sprinkles of cinnamon
vegetable or canola oil
butter
In a large saucepan, preferably cast iron, put over medium heat. Add oil to the pan, about an inch high. Mix together the rest of the ingredients, except for the butter, and dip the bread until covered. At this point, add the butter to the oil. This will provide some favor. Gently put the soaked bread into the pan. After a few minutes, the outside of the crust will bubble. Look at the color to make sure it doesn't burn, then take a fork and when golden brown, flip to the other side and cook for a few more minutes until golden brown. Put on a plate covered with a paper towel and dab to removed oil from surface. If desired, heat oven at about 200 degrees to keep the French Toast warm on an ovenproof plate. Repeat with remaining pieces of bread until egg mixture is gone. After dabbing off excess oil, it is ready to serve.
This should be eaten with a good quality grade B maple syrup, along with a pat of butter, if desired. You could also just sprinkle with some confectioner's sugar on top and serve with fruit. It is your choice.
