As I said before, I am a fan of eggs! This is a simple recipe that takes patience and time, but is effortless to make. It's one of my favorites and I hope it turns into one of yours, too!
2 eggs
1/4 - 1/2 cups of shredded cheddar cheese
salt and pepper
butter
Combine eggs, cheese, and salt and pepper until the yoke is incorporated. In a small sauce pan, over high heat, melt butter until frothy with bubbles. Add egg mixture, which will start to set up in a few moments. Lower to heat to low. Use a wooden spoon and stir the eggs. After some time, it will begin to set up. There will be a sheen that will eventually decrease. The mixture will begin to set, with less sheen, but make sure it doesn't lose its sheen completely. The mixture should still be a little moist when done, so the eggs don't get overcooked. The cooking time should be about 5-7 minutes. Slide onto the plate into a neat pile, and if desired, serve with buttered toast (low carb for me!), your choice of bacon or sausage, and a sliced orange. This will add a lot of color and make a hearty breakfast to start your day.
