The Cookie Countdown Begins!

Well, it's waiting for me, anyway.  I still have to go shopping to get the ingredients I don't have on hand.  I'm taking a well liked classic chocolate cookie recipe and I'm "veganizing" and "gluten-free-ifying" it.  I've got to figure out how much cocoa powder to add to it to make it a successful double chocolate chip recipe.  It doable.

These are for my husband to take away with him on his trip.  It's a little more challenging to make these specialized cookies, but I think I've mastered it.  As it turns out, he's leaving a day later than I thought, so I'm putting off making them until the day before he goes.  It may seem like I'm lazy, but that way he'll get freshly baked cookies instead of on its way to stale 2 day old cookies.

I'll post pics, but until then, here's a pic from a a batch that I made that was neither vegan, nor gluten-free.  I call these "Oh My God" cookies, based on Rich's reaction, as well as that of my friend Samantha.
